Ingredients

  • 1 pkg. lemon jello
  • 3/4 c. hot water
  • 1/4 lb. graham cracker crumbs
  • 16 oz. Philadelphia cream cheese
  • 1 c. sugar
  • 2 tsp. vanilla
  • 1 large can chilled Carnation evaporated milk
  • 1/2 c. melted butter

Instructions

  1. Mix graham cracker crumbs and melted butter and press into a greased 12 x 7 1/2 x 2-inch pan to form the crust.
  2. Mix lemon jello and hot water and let stand at room temperature until dissolved.
  3. In a separate bowl, beat cream cheese, sugar, and vanilla with a fork until soft, then mix in the prepared jello.
  4. Whip evaporated milk until stiff peaks form.
  5. Gently fold the whipped evaporated milk into the cream cheese mixture.
  6. Pour the combined mixture over the crust.
  7. Refrigerate for about 2 hours until set.
