Ingredients

  • 1 cup sugar
  • 2 eggs
  • 2 tablespoons vinegar
  • 2 tablespoons flour or cornstarch
  • 1 cup water
  • small lump margarine
  • 1/2 teaspoon lemon extract

Instructions

  1. Combine sugar, eggs, vinegar, flour or cornstarch, and water in a double boiler.
  2. Cook until thickened and smooth, stirring occasionally.
  3. Just before removing from heat, stir in butter and lemon extract.
  4. Pour filling into a baked pie shell.
  5. If desired, top with whipped topping.
