Ingredients

  • 2 large chicken breasts
  • 1/4 cup lemon juice
  • 2 teaspoons ginger
  • 1 teaspoon minced garlic
  • 2 teaspoons vegetable oil
  • 1 teaspoon curry powder
  • salt to taste
  • pepper to taste

Instructions

  1. In a bowl, combine lemon juice, ginger, garlic, salt, and pepper.
  2. Place chicken in marinade; turn to coat.
  3. Cover and marinate; refrigerate for at least 1 hour.
  4. Prepare grill or preheat oven for broiling.
  5. Remove chicken from marinade; place in broiling pan.
  6. Rub with oil; sprinkle with curry powder and cayenne.
  7. Grill or broil 6 to 8 inches from heat source until meat is cooked through, about 8 to 10 minutes per side.
