A colorful, hearty vegetable platter featuring cauliflower, potatoes, peas, carrots, all seasoned and arranged beautifully for a family-friendly meal or special occasion.

Ingredients

  • 1 head cauliflower
  • 6 or 8 medium potatoes
  • 1 pint English peas
  • 1/2 lb butter
  • bunch carrots

Instructions

  1. Cook cauliflower, potatoes, peas, and carrots separately in salt water until tender.
  2. Place the cauliflower in the center of a large round or oblong platter.
  3. Sprinkle the cauliflower with black pepper and melted butter.
  4. Cream the potatoes and make a ring around the cauliflower, about 2 inches wide.
  5. Season the peas with butter and pepper, then place them in the trench around the cauliflower.
  6. Arrange seasoned carrots, cut lengthwise, around the dish with pointed ends outward.
