Ingredients

  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin
  • 3 eggs
  • 2 1/3 cups Bisquick baking mix
  • 1/2 cup raisins
  • 1 1/2 cups sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F.
  2. Generously grease the bottom of a 9 x 5 x 3-inch loaf pan.
  3. In the pan, stir vegetable oil, pumpkin, eggs, baking mix, sugar, and cinnamon together with a fork until moistened; beat vigorously for 1 minute.
  4. Stir in raisins.
  5. Bake until a wooden pick inserted in the center comes out clean, about 45 to 55 minutes.
  6. Cool for 5 minutes.
  7. Run a knife or metal spatula around the sides of the loaf to loosen; remove from pan.
  8. If the loaf sticks to the sides of the pan, press gently on the sides with a knife.
