One Pot Noodles
Ingredients
- 1 tablespoon coconut oill ⓘ
- 3 garlic cloves ⓘ
- 2 inches ginger
- 1/2 cup dessicated coconut
- 1 teaspoon maple syrup ⓘ
- 2 tablespoons red curry paste ⓘ
- 1 cup coconut milk
- 2 tablespoons soy sauce ⓘ
- 1/2 cup chopped peppers ⓘ
- 1 cup spinach
- 1 lime juice ⓘ
- 8 ounces Ramen noodles ⓘ
- 1 handful cilantro for garnish ⓘ
Instructions
- Heat the oil in a pan and fry the ginger and garlic, stirring for a minute or two.
- Add dessicated coconut, maple syrup, soy sauce and red curry paste and mix. Stir in the coconut milk and bring it to a slow boil.
- Add the vegetables and stir until they begin to soften, about 5 mins.
- Add the noodles last, stir until covered in sauce, cook for 5 mins.
- Serve, garnished with lime juice and cilantro.
