Ingredients

  • 3 strips bacon
  • 2 c. frozen hash browns
  • 4 eggs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. milk
  • 1 tsp. chopped chives
  • 2 oz. grated Cheddar cheese

Instructions

  1. Chop the bacon into small pieces and fry in a skillet until almost crisp; drain excess grease.
  2. Add the frozen hash browns to the skillet and reduce heat to medium-low.
  3. Continue cooking until the hash browns are browned, turning frequently with a spatula.
  4. In a bowl, whisk together the eggs, salt, pepper, and milk.
  5. Pour the egg mixture into the skillet with the hash browns and bacon.
  6. Sprinkle with chopped chives and grated Cheddar cheese.
  7. Cook until eggs are set and cheese is melted.
