Ingredients

  • 2 cups beans
  • 2 tablespoons salt
  • 2 quarts water
  • 2 cups diced ham or sliced smoked sausage
  • 1 large onion, chopped
  • 1 garlic clove
  • 1 teaspoon chili powder
  • 1 (28 oz.) can tomatoes
  • 1 to 2 tablespoons lemon juice

Instructions

  1. Rinse the beans and place them in a large kettle.
  2. Cover the beans with water and add salt.
  3. Soak overnight.
  4. Drain the beans.
  5. Add 2 quarts of water and the ham or sausage to the kettle.
  6. Simmer for 2 1/2 to 3 hours.
  7. Add the chopped onion, garlic, chili powder, tomatoes, and lemon juice.
  8. Simmer the soup for an additional 45 minutes.
  9. Taste and add salt and pepper if desired.
  10. Serve hot.
