Ingredients

  • 3 chopped onions
  • 2 lb cubed potatoes
  • 1 cup buttermilk
  • 1 cup water
  • 1 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Combine all ingredients in a saucepan and simmer covered for 20 minutes or until the potatoes are tender.
  2. Drain, reserving the liquid.
  3. Add 3/4 cup of the reserved liquid to the potatoes and mash until smooth.
  4. Add more cooking liquid to thin the mixture if necessary.
