Ingredients

  • 1/3 lb Kasseri cheese
  • 1 egg
  • 1 Tbsp milk
  • flour
  • olive oil
  • brandy
  • lemon wedge

Instructions

  1. Cut the Kasseri cheese into 1/3-inch thick slices.
  2. In a bowl, beat the egg and mix in the milk.
  3. Dredge the cheese slices in flour, then dip into the egg mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Pan-fry the coated cheese slices until golden brown on both sides.
  6. Remove from skillet and drain on paper towels.
  7. Pour a splash of brandy into the skillet to deglaze, then ignite to flambe if desired.
  8. Serve the fried cheese with lemon juice from a wedge.
