Open Face Blueberry Pie

Ingredients

  • 1 baked pie shell (9 to 10-inch)
  • 1 qt. blueberries (4 c.)
  • 1 c. sugar
  • 3/4 c. water
  • 2 Tbsp. flour
  • 1/4 tsp. salt

Instructions

  1. In a saucepan, put 1 cup blueberries, sugar and water.
  2. Bring to a boil; make a paste combining flour, salt and water.
  3. Add to the blueberry mixture, stirring until thickened.
  4. Remove from heat and add hot mixture to uncooked reserved 3 cups blueberries.
  5. Fold well and pour all into the baked pie shell.
  6. Chill for at least 3 hours.
  7. Serve topped with whipped cream or ice cream.
