Orange-Avocado Salad
Ingredients
- 1/4 teaspoon grated orange rind ⓘ
- 2 tablespoons fresh orange juice ⓘ
- 2 tablespoons red wine vinegar ⓘ
- 2 teaspoons olive oil ⓘ
- 1/8 teaspoon salt ⓘ
- 1/8 teaspoon pepper ⓘ
- 2 cups torn fresh watercress
- 1 cup torn fresh spinach ⓘ
- 2 oranges, peeled and sectioned ⓘ
- 1 small avocado, peeled and thinly sliced ⓘ
Instructions
- Combine first 6 ingredients in a small bowl, stirring well with a whisk.
- Combine watercress and spinach. Pour orange juice mixture over greens; toss gently.
- Divide watercress mixture evenly among salad plates. Arrange orange sections and avocado slices evenly over each salad.
