Ingredients

  • 6 slices cinnamon-raisin bread
  • nonstick cooking spray
  • 1 (12 oz.) can evaporated fat-free milk
  • 1/2 cup frozen Florida orange juice concentrate, thawed
  • 2 eggs
  • 2 tablespoons sugar
  • 2/3 cup water
  • 1 tablespoon cornstarch or flour
  • 2 teaspoons honey
  • dash of ground nutmeg

Instructions

  1. Place bread slices in a single layer on a baking sheet.
  2. Bake in a 325°F oven for 10 minutes, turning once.
  3. Cool on a wire rack. Cut into cubes; set aside.
  4. Lightly coat six 6-ounce custard cups with nonstick cooking spray.
  5. Divide bread cubes among the custard cups.
  6. In a bowl, beat together evaporated fat-free milk, 1/4 cup of the thawed orange juice concentrate, eggs, and sugar.
  7. Pour the milk mixture evenly over the bread cubes. Lightly press the cubes into the mixture.
  8. Arrange the custard cups in a 13 x 9 x 2-inch baking pan.
  9. Place the pan in the oven.
  10. Carefully pour very hot tap water into the pan around the custard cups to a depth of 1 inch.
  11. Bake in a 325°F oven for 35 to 40 minutes or until a knife inserted near the center comes out clean.
  12. Remove the cups from the baking pan.
  13. Let stand for 15 minutes.
