Ingredients

  • 1 pkg. unflavored gelatin
  • 1/2 cup cold milk
  • 1/2 cup milk
  • 2/3 cup sugar
  • 1/8 teaspoon salt
  • 2 tablespoons lemon juice
  • 2 cups low-fat creamed cottage cheese
  • 1/3 cup undiluted orange juice concentrate
  • 1/2 teaspoon vanilla
  • 1 (9-inch) crumb crust

Instructions

  1. Sprinkle unflavored gelatin over cold milk in a blender or food processor.
  2. Let stand while assembling remaining ingredients.
  3. Add hot milk and process at low speed until gelatin dissolves.
  4. Stop blender; add remaining ingredients.
  5. Cover and process at high speed until smooth.
  6. Pour into the graham cracker crust.
  7. Sprinkle a few crumbs on top to garnish.
  8. Chill until firm.
