- Separate the eggs, and beat the yolks until lemon colored.
- Add grated orange rind, orange juice, and a pinch of salt to the yolks.
- Sift together the cake flour and half of the sugar three times, then add to the yolk mixture.
- Beat the egg whites until frosty.
- Add cream of tartar, remaining salt, and sugar to the egg whites and beat until it looks like frosting.
- Gently fold the yellow yolk mixture into the stiff egg whites.
- Pour the batter into an ungreased angel food pan.
- Bake at 325°F for 1 hour.
- Invert the pan after baking and let cool completely before removing.
