Ingredients

  • 1 1/2 cups sugar
  • 9 eggs
  • 1 cup cake flour
  • 1 teaspoon cream of tartar
  • rind of 1 orange
  • 1/3 cup orange juice

Instructions

  1. Separate the eggs, and beat the yolks until lemon colored.
  2. Add grated orange rind, orange juice, and a pinch of salt to the yolks.
  3. Sift together the cake flour and half of the sugar three times, then add to the yolk mixture.
  4. Beat the egg whites until frosty.
  5. Add cream of tartar, remaining salt, and sugar to the egg whites and beat until it looks like frosting.
  6. Gently fold the yellow yolk mixture into the stiff egg whites.
  7. Pour the batter into an ungreased angel food pan.
  8. Bake at 325°F for 1 hour.
  9. Invert the pan after baking and let cool completely before removing.
