Ingredients

  • 1 box yellow cake mix or orange cake mix
  • 4 eggs
  • 3/4 cup oil
  • 1 (13 oz.) can mandarin oranges and juice
  • 1 (20 oz.) can crushed pineapple
  • 1 small box vanilla pudding mix (instant)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 13-inch baking pan.
  2. In a large mixing bowl, combine the cake mix, eggs, oil, and mandarin oranges with juice. Mix until well blended.
  3. Pour the batter into the prepared pan and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  4. While the cake is still warm, pour 3/4 cup of juice from the crushed pineapple over the top.
  5. In a separate bowl, mix the pineapple with the vanilla pudding mix until smooth.
  6. Spread the pineapple and pudding mixture evenly over the cooled cake.
  7. Top with Cool Whip or whipped topping and refrigerate before serving.
