Orange Prune Bread

Ingredients

  • 1 c. orange juice
  • 2 c. chopped prunes
  • 1/4 c. shortening
  • 1 1/2 c. white sugar
  • 2 eggs
  • 3 c. flour
  • 1 c. chopped nuts (walnuts or pecans)
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon

Instructions

  1. Pour 1 cup of boiling orange juice over prunes; let stand for 15 minutes.
  2. Cream sugar and shortening, then add eggs and stir well.
  3. Add prune mixture, flour, salt and soda; mix well, then add the nuts.
  4. Pour into 2 well-greased loaf pans.
  5. Bake at 350° for 1 hour.
