Ingredients

  • 2 slightly beaten eggs
  • 1 1/2 cups orange juice
  • 1/4 cup vegetable oil
  • 1 1/2 tablespoons grated orange peel
  • 2 cups Raisin Bran
  • 2 1/2 cups sifted flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder

Instructions

  1. Preheat oven to 350°.
  2. Grease a 9 x 5 x 3-inch pan.
  3. Combine eggs, orange juice, oil, and grated orange peel.
  4. Stir in Raisin Bran and set aside.
  5. In a large bowl, sift flour, sugar, baking powder, and salt.
  6. Stir in walnuts.
  7. Add liquid ingredients all at once.
  8. Stir just until moistened and turn into the pan.
  9. Bake for 55 to 60 minutes or until tested with a toothpick.
  10. Cool for 15 minutes before removing from the pan.
