Ingredients

  • 1 pkg Duncan Hines Deluxe lemon cake mix
  • 1 Tbsp grated coconut
  • 2 Tbsp grated orange peel
  • 1 cup evaporated milk
  • 3/4 cup orange juice
  • 1/3 cup orange juice
  • 6 large eggs
  • 1/3 cup Crisco oil
  • 3/4 cup sugar
  • 1 cup whipping cream
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Combine dry cake mix, grated coconut, 1 tablespoon grated orange peel, evaporated milk, 1/3 cup orange juice, 2 eggs, and oil in a large mixer bowl.
  3. Mix the cake batter as directed on the package.
  4. Divide the batter evenly between two layer pans and bake at 350°F for 30 to 35 minutes.
  5. Cool the cakes in the pans on racks for 10 minutes.
  6. Remove from pans and cool completely on racks.
  7. Refrigerate the cakes to ease in splitting.
  8. For the orange filling, beat 3 eggs in a saucepan until blended.
  9. Stir in sugar, 3/4 cup orange juice, and 1 tablespoon grated orange peel.
  10. Cook and stir over low heat until thickened.
  11. Cool the filling.
  12. Whip the cream until stiff.
  13. Fold the whipped cream, vanilla extract, and almond extract into the cooled egg mixture.
  14. Split each cake layer into two thin layers.
  15. Spread the orange filling between the layers and on top of the cake.
  16. Decorate with mandarin orange segments and toasted almonds, if desired.
  17. Refrigerate before serving.
