  • 2 to 3 Tbsp soy sauce
  • 2 to 3 Tbsp ground sesame seed

  1. Select 3 to 4 Japanese-type eggplants, avoiding round American varieties.
  2. Wash and trim the eggplants if needed.
  3. Cut the eggplants into your preferred shape, such as halves or diagonally sliced pieces.
  4. Heat a skillet or wok over medium heat.
  5. Add the eggplants and cook until they begin to soften, about 5-7 minutes.
  6. Add 2 to 3 tablespoons of soy sauce and continue cooking for another 5-8 minutes until the eggplants are tender and well-coated.
