Ingredients

  • 1 cup orzo
  • 4 cups cut up broccoli flowerets
  • 1/2 cup coarsely chopped drained marinated artichoke hearts
  • 1 (6 oz.) can ripe olives drained and coarsely chopped
  • 2 medium tomatoes chopped
  • 2 scallions chopped
  • 2 Tbsp. olive oil
  • 3 Tbsp. red wine vinegar
  • 1/4 tsp. garlic salt
  • 1/4 tsp. pepper
  • 1 cup diced cooked chicken

Instructions

  1. In a large pot of boiling salted water, cook orzo over medium-high heat for 6 minutes.
  2. Add broccoli to the pot and cook for an additional 4 to 5 minutes until tender.
  3. Drain well and return to the pot.
  4. Add artichoke hearts, olives, tomatoes, scallions, olive oil, red wine vinegar, garlic salt, pepper, and cooked chicken to the pot.
  5. Toss well to combine and serve immediately on mixed salad greens.
