- In a small bowl mix the yeast with a coffeespoon of sugar, 1 tablespoon flour and 3 tablespoons of milk (taken in the above mentioned measures).
- Allow the mixture to double in volume.
- In the mixer bowl pour the eggs (2 yolks and 1 whole egg), sugar, orange blossom water, butter and then mix.
- Add the mixture with the yeast, flour, milk and raisins. Knead for about 7-10 minutes to get a smooth paste.
- Cover the bowl with a dry cloth and let the dough double in volume.
- On a lightly floured work surface , place the dough, degas it by pressing on it with your fist.
- Divide it into 12 equal portions, make balls.
- Place the balls on a baking sheet covered with parchment paper.
- With the help of a scissors cut the dough in 3 large notches .
- Brown them with the brush with the remaining egg. Dilute it with a tablespoon of milk. Preheat the oven to 170°C and let the buns rise while preheat your oven.
- Bake for about 25 to 30 minutes so that they get well browned.
