  1. In a small bowl mix the yeast with a coffeespoon of sugar, 1 tablespoon flour and 3 tablespoons of milk (taken in the above mentioned measures).
  2. Allow the mixture to double in volume.
  3. In the mixer bowl pour the eggs (2 yolks and 1 whole egg), sugar, orange blossom water, butter and then mix.
  4. Add the mixture with the yeast, flour, milk and raisins. Knead for about 7-10 minutes to get a smooth paste.
  5. Cover the bowl with a dry cloth and let the dough double in volume.
  6. On a lightly floured work surface , place the dough, degas it by pressing on it with your fist.
  7. Divide it into 12 equal portions, make balls.
  8. Place the balls on a baking sheet covered with parchment paper.
  9. With the help of a scissors cut the dough in 3 large notches .
  10. Brown them with the brush with the remaining egg. Dilute it with a tablespoon of milk. Preheat the oven to 170°C and let the buns rise while preheat your oven.
  11. Bake for about 25 to 30 minutes so that they get well browned.
