Ingredients

  • 2 1/4 cups flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup solid shortening
  • 3/4 cup milk
  • 2 extra large eggs
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon water
  • 1 pint blueberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line muffin tins with paper liners or grease and flour the pans.
  3. In a large bowl, combine flour, sugar, baking powder, and salt.
  4. In a separate bowl, beat eggs, then add milk, vanilla, solid shortening, and water, mixing well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Gently fold in the blueberries.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for about 20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
