Ingredients

  • 1 cup long cooking rice
  • 1 large onion
  • 1 tablespoon butter
  • 2 cans (10 1/2 oz.) beef consomme

Instructions

  1. Dice the onion and sauté in butter in a small saucepan until translucent.
  2. In a 9 x 13-inch dish, combine the uncooked rice and beef consomme.
  3. Stir in the sautéed onion into the rice mixture.
  4. Bake uncovered in a 400°F oven for 1 hour until the rice is tender and liquid is absorbed.
