Oven-Dried Cherry Tomatoes

Ingredients

  • 2 pints cherry tomatoes, halved
  • 6 fresh thyme sprigs
  • 4 garlic cloves, crushed
  • 2 teaspoons salt
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 275F.
  2. Combine the cherry tomatoes, thyme, garlic, salt, and olive oil in a large mixing bowl and toss to thoroughly coat the tomatoes.
  3. Spread out the tomatoes on a large rimmed baking sheet.
  4. Bake until the tomatoes are shriveled and sweet but not browned, about 1 1/2 hours.
  5. Rotate the pan every 30 minutes for even cooking.
