- Remove the hard part from the oysters and mince the rest very fine.
- Take the yolks of eight eggs and the whites of four eggs; beat until very light, then mix in the minced oysters.

- Put a gill of butter into a skillet and let it melt.
- When the butter boils, skim it and pour in the omelette mixture.
- Stir until the omelette stiffens and fry until light brown.
- When the underside is brown, turn the omelette onto a hot platter.
- To brown the upper side, hold a red-hot shovel over it.
