Ingredients

  • 6 large oysters
  • 8 eggs
  • salt
  • pepper

Instructions

  1. Remove the hard part from the oysters and mince the rest very fine.
  2. Take the yolks of eight eggs and the whites of four eggs; beat until very light, then mix in the minced oysters.
  3. Season with salt and pepper and beat thoroughly.
  4. Put a gill of butter into a skillet and let it melt.
  5. When the butter boils, skim it and pour in the omelette mixture.
  6. Stir until the omelette stiffens and fry until light brown.
  7. When the underside is brown, turn the omelette onto a hot platter.
  8. To brown the upper side, hold a red-hot shovel over it.
