Oysters Maxwell offers a delightful combination of fresh oysters topped with bacon, jalapenos, and rich cheese, then baked to perfection. Ingredients

  • 6 fresh oysters
  • 3 strips bacon
  • 8 oz cocktail sauce
  • 6 oz mozzarella cheese
  • 6 sliced jalapeno peppers

Instructions

  1. Cut bacon strips into thirds and cook until almost done.
  2. Open fresh oysters and remove them from the shell.
  3. Place one piece of bacon at the bottom of each oyster shell.
  4. Set the oyster on top of the bacon in the shell.
  5. Top with another bacon strip, sliced jalapeno peppers, and cocktail sauce.
  6. Place the oysters in the oven at 350°F for 15 minutes.
  7. Remove from oven, top with mozzarella cheese, and bake until brown and bubbly.
  8. Serve on a plate of heated rock salt with a fancy lemon half dusted with paprika.
  9. Optional: serve with additional cocktail sauce.
