Pacos are flavorful stuffed tortillas filled with seasoned meat, potatoes, and cheese, perfect for a hearty, customizable Mexican-inspired meal suited for family dinners or casual gatherings.

Ingredients

  • 4 medium potatoes, chopped
  • 2 lb hamburger
  • Cheddar cheese
  • 1 can stewed tomatoes
  • salt and pepper to taste
  • 2 pkg taco seasoning

Instructions

  1. Soft-fry potatoes until cooked, then drain.
  2. Cook hamburger and follow taco seasoning package instructions, reducing water to accommodate the juice of tomatoes.
  3. Add stewed tomatoes, cooked potatoes, and Cheddar cheese to the meat mixture and heat through.
  4. Heat flour tortillas until warm.
  5. Fill each tortilla with the meat mixture, wrap up, and serve.
  6. Optional: serve with sour cream, guacamole, and picante sauce.
