Pam's Mac-N-Cheese combines creamy light cheeses with tender macaroni for a comforting, cheesy dish perfect for family dinners or casual gatherings.

Ingredients

  • 1 lb. elbow macaroni
  • 1 (12 oz.) can light evaporated skimmed milk
  • 4 egg whites
  • 16 oz. light Cheddar cheese, grated
  • 16 oz. Velveeta light cheese, sliced
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 stick margarine

Instructions

  1. Cook macaroni according to package directions.
  2. In a bowl, stir together eggs, evaporated milk, salt, and black pepper; set aside.
  3. Grate the light Cheddar cheese.
  4. Cut Velveeta cheese into small blocks or slices.
  5. Layer cooked macaroni and cheese in a large dish or several small casserole dishes, repeating 2 or 3 times.
  6. Pour the milk-egg mixture over the layered macaroni and cheese. If using multiple dishes, pour an equal amount over each.
  7. Bake at 350° to 375°F for 45 minutes to 1 1/2 hours until bubbly and heated through.
