Pancetta Omelette

- Preheat broiler. In a medium bowl, combine eggs, milk, 1/2 the cheese and green onions. Season to taste.
- Heat oil in an 8 inch nonstick frying pan over medium heat. Add egg mixture. Cook, covered, for 6-8 mins, until set. Top with pancetta, tomato, zucchini and remaining cheese. Transfer to oven and broil for 1-2 mins, until cheese is melted and lightly browned.
- Cut omelette into wedges. Serve with mixed greens.
