Ingredients

  • 1/4 cup tarragon vinegar
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 cup vegetable oil
  • 1/2 small onion, finely chopped

Instructions

  1. Put vinegar and dry ingredients in blender with motor running. Add oil in steady stream.
  2. Add onion, then papaya seed and blend until seed looks coarsely ground.
  3. Chill for 1 hour.
  4. Serve on fruit or green salads.
