Ingredients

  • 4 large Russet potatoes
  • 1/4 cup olive oil
  • 1 teaspoon dried crushed red pepper
  • 1/2 cup freshly grated Parmesan
  • chopped fresh basil

Instructions

  1. Position the oven rack in the lowest third and preheat to 375°F.
  2. Place the cut potatoes in a roasting pan.
  3. Add olive oil and crushed red pepper, then toss to coat evenly.
  4. Season with salt and pepper to taste.
  5. Bake until tender inside and crusty outside, turning once, about 1 hour.
  6. Sprinkle with freshly grated Parmesan and chopped fresh basil before serving.
