Parmesan Pretzel Chicken

Ingredients

  • 2 large chicken breasts
  • 2 cups finely crushed pretzels
  • 2 eggs
  • 1/3 cup Italian dressing
  • 3 tablespoons lemon juice
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons olive oil

Instructions

  1. Preheat oven to 300 degrees.
  2. Add olive oil to skillet. Heat over medium-heat.
  3. Slice chicken breasts in half to make 4 thin fillets.
  4. Crush pretzels in a bag. NOTE: Pretzels must be finely crushed to avoid burning.
  5. Add parmesan cheese to crushed pretzels. Shake bag to mix.
  6. Whisk 2 eggs in a shallow bowl.
  7. Add Italian dressing and lemon juice to eggs.
  8. Coat chicken in egg mixture then put in bag and shake to coat.
  9. Add chicken to skillet and cook 3 minutes each side or until coating is browned.
  10. Place chicken in a foil lined baking dish and place in oven for 20-30 minutes.
