Party Spinach Dip

Ingredients

  • 12 oz. low-fat cottage cheese
  • 1 c. sour cream
  • 10 oz. frozen chopped spinach, thawed and drained
  • 1 tsp. lemon juice
  • 1/2 c. dry vegetable soup
  • 2 tsp. grated fresh onion

Instructions

  1. Process cottage cheese until smooth.
  2. Press thawed and drained spinach between paper towels until barely moist.
  3. Add spinach, sour cream, lemon juice, dry vegetable soup, and grated onion to the cheese.
  4. Stir well to combine.
  5. Cover and refrigerate for about 3 hours before serving.
