Ingredients

  • 1 sirloin steak (2-inches thick, about 5 lb.)
  • 1 tsp. freshly ground pepper
  • 1/2 c. (1 stick) butter
  • 2 tsp. dry mustard
  • 3/4 lb. fresh mushrooms, washed, trimmed, sliced
  • 1 1/2 c. sliced green onions
  • 1 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt (optional)
  • 1/4 c. fresh chopped parsley

Instructions

  1. Season the sirloin steak with freshly ground pepper.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the dry mustard and cook for 1 minute.
  4. Add the sliced mushrooms and cook until they are tender, about 5 minutes.
  5. Stir in the sliced green onions and cook for another 2 minutes.
  6. Add lemon juice, Worcestershire sauce, and a splash of dry vermouth to the skillet.
  7. Place the steak in the skillet and cook to desired doneness, approximately 5-7 minutes per side.
  8. Remove the steak and let it rest for a few minutes.
  9. Slice the steak and serve topped with the mushroom and onion sauce, garnished with chopped parsley.
