Crispy, cheesy potato slices topped with bacon and served with a tangy sour cream chive dip, perfect for parties and gatherings.

Ingredients

  • 3/4 cup sour cream
  • 1 tablespoon chopped chives
  • 3 baking potatoes, cut into 1/4-inch slices
  • Velveeta cheese spread, quartered
  • 6 slices bacon, crumbled
  • melted margarine

Instructions

  1. Preheat the oven to broil.
  2. Mix together sour cream and chopped chives.
  3. Lightly brush both sides of the potato slices with melted margarine and place them on an ungreased cookie sheet.
  4. Broil the potato slices for 5 minutes on each side or until lightly browned.
  5. Top the potato slices with Velveeta cheese spread and crumbled bacon.
  6. Continue broiling until the cheese begins to melt.
  7. Serve the potato slices with the sour cream and chive mixture.
