Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup chopped red onion
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 teaspoon poppy seeds
  • 1/2 teaspoon dried minced onion
  • 1/4 to 1/2 teaspoon prepared mustard
  • 1/8 to 1/4 teaspoon salt
  • 5 cups torn fresh spinach
  • 5 cups torn iceberg lettuce
  • 1/2 pound fresh mushrooms sliced
  • 1 carton (8 oz.) cottage cheese
  • 1 cup (4 oz.) shredded Swiss cheese
  • 2 bacon strips cooked and crumbled

Instructions

  1. In a jar with a tight-fitting lid, combine vegetable oil, chopped red onion, sugar, vinegar, poppy seeds, dried minced onion, prepared mustard, and salt.
  2. Refrigerate the dressing overnight to let flavors meld.
  3. Just before serving, toss torn spinach, torn iceberg lettuce, sliced mushrooms, cottage cheese, and shredded Swiss cheese in a large salad bowl.
  4. Shake the dressing well and pour over the salad, tossing gently to coat evenly.
  5. Sprinkle with crumbled bacon strips before serving.
