Ingredients

  • 1 Tbsp unflavored gelatin
  • 1/4 c cold water
  • 6 eggs
  • 1 (6 oz) can frozen passion fruit juice, thawed
  • 1 Tbsp lemon juice
  • 1 1/4 c sugar
  • 1 loaf angel food cake
  • 1 c heavy cream

Instructions

  1. Soften gelatin in cold water.
  2. In a saucepan, combine egg yolks, passion fruit juice, and 1/2 cup of sugar.
  3. Cook over low heat, stirring constantly, until mixture thickens, about 20 minutes.
  4. Remove from heat, add softened gelatin and stir until dissolved; cool.
  5. Oil a 10-inch tube pan.
  6. Tear angel food cake into small 1-inch pieces.
  7. Place a layer of cake pieces in the prepared pan.
  8. Beat egg whites until soft peaks form.
  9. Gradually beat in the remaining 3/4 cup sugar, beating until stiff peaks form.
  10. Gently fold the cooked mixture into the beaten egg whites.
  11. Pour part of the mixture over the cake layer.
  12. Repeat layering with remaining cake pieces and cooked mixture until all are used.
  13. Chill for 6 to 8 hours or overnight.
  14. Unmold the dessert.
  15. Frost with whipped cream before serving.
