- Soften gelatin in cold water.
- In a saucepan, combine egg yolks, passion fruit juice, and 1/2 cup of sugar.
- Cook over low heat, stirring constantly, until mixture thickens, about 20 minutes.
- Remove from heat, add softened gelatin and stir until dissolved; cool.
- Oil a 10-inch tube pan.
- Tear angel food cake into small 1-inch pieces.
- Place a layer of cake pieces in the prepared pan.
- Beat egg whites until soft peaks form.
- Gradually beat in the remaining 3/4 cup sugar, beating until stiff peaks form.
- Gently fold the cooked mixture into the beaten egg whites.
- Pour part of the mixture over the cake layer.
- Repeat layering with remaining cake pieces and cooked mixture until all are used.
- Chill for 6 to 8 hours or overnight.
- Unmold the dessert.
- Frost with whipped cream before serving.
