Pasta Frittata

Ingredients

  • 5 large eggs
  • 1/3 c. grated Parmesan cheese
  • 1/4 c. milk
  • 4 c. cooked pasta or 2 c. cooked pasta and 2 c. sauteed/cooked vegetables (tuna, canned crab or salmon can be added to veggies)
  • 1/4 tsp. salt
  • black pepper to taste
  • 1/2 Tbsp. butter

Instructions

  1. Preheat oven to 350°.
  2. Butter a pie plate.
  3. Beat eggs in bowl. Stir in all remaining ingredients, except butter.
  4. Pour into pie plate.
  5. Cut up butter and place pieces all over the top of the mixture.
  6. Bake 10 minutes.
  7. Very gently stir mixture.
  8. Bake another 10 to 15 minutes, until knife in center comes out almost dry.
  9. Can cut and serve immediately.
