Ingredients

  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 large can whole tomatoes, drained
  • 1 (24 oz.) can tomato puree
  • 1/2 tsp oregano
  • 1 Tbsp parsley
  • chopped or sliced peppers, onions, mushrooms, zucchini and artichoke hearts (optional)
  • 1 lb your favorite pasta

Instructions

  1. Saute minced garlic in olive oil until fragrant.
  2. Add drained whole tomatoes and tomato puree, stirring in oregano and parsley.
  3. Add chosen vegetables such as peppers, onions, mushrooms, zucchini, and artichoke hearts, simmering until tender.
  4. Serve the sauce over cooked pasta, tossing to coat.
  5. Enjoy with a sprinkle of fresh herbs if desired.
