Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 6 to 7 tablespoons ice water

Instructions

  1. In a mixing bowl, stir together flour and salt.
  2. Cut in shortening until pieces are the size of small peas.
  3. Sprinkle 3 to 4 tablespoons of ice water over mixture.
  4. Gently toss with a fork. Add just enough water to hold mixture together.
  5. Divide and form each half into a ball.
  6. On a lightly floured surface, flatten 1 ball of dough with hands.
  7. Roll from center to edge, forming a circle about 12 inches in diameter.
  8. Wrap pastry around rolling pin.
  9. Unroll onto pie plate, easing into the plate being careful not to stretch.
  10. Trim away beyond the rim of the plate.
  11. Repeat with the remaining dough.
