Ingredients

  • 1 qt. muscadines
  • 1 c. sugar
  • 1 1/2 Tbsp. lemon juice
  • 2 Tbsp. flour
  • 1/8 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 uncooked pastry shell
  • 2 Tbsp. margarine, melted

Instructions

  1. Press muscadines, one at a time, to remove the pulp.
  2. Boil the hulls in a small amount of water for 30 minutes or until tender.
  3. Cook the pulp and sugar for 15 minutes, then mash through a sieve to remove seeds.
  4. Drain the hulls and add to pulp.
  5. Mix lemon juice, flour, and salt to a smooth paste.
  6. Add the paste to the pulp and hulls.
  7. Stir in cinnamon and pour into the uncooked pastry shell.
  8. Bake until the crust is golden and the filling is bubbly.
