Ingredients

  • 12 eggs
  • 2 1/4 cups sugar
  • 1 quart cognac
  • 1 cup apricot brandy
  • 4 quarts heavy cream
  • 1 cup powdered sugar

Instructions

  1. Beat the egg yolks with an electric mixer until thick and almost white. Continue beating and add in the granulated sugar, cognac, and brandy.
  2. Fold in 3 quarts of heavy cream and 6 whipped egg whites that were whipped until soft peaks formed.
  3. In another bowl, beat 6 egg whites very stiff. Gradually add the powdered sugar, then fold this mixture into the eggnog.
  4. In another bowl, whip 3 cups of heavy cream until barely holds its shape.
  5. Blend this whipped cream into the eggnog with a rubber spatula.
  6. Let the eggnog rest for 12 to 14 hours before serving.
