Instructions

  2. Grease an 8-inch round cake pan.
  3. Line the bottom with a circle of wax paper.
  4. Grease the wax paper and dust lightly with cornstarch.
  5. Beat the egg whites in a large bowl until foamy.
  6. Add the salt and continue beating until stiff peaks form.
  7. Gradually add the sugar, beating well after each addition.
  8. When whites are glossy, mix 2 teaspoons of cornstarch with the vinegar and fold into the whites.
  9. Spoon the mixture into the prepared cake pan and smooth towards the edges.
  10. Hollow out the center slightly to create a well.
  11. Place the pan in the oven and reduce the temperature to 250°F (120°C).
  12. Bake for 1 1/4 hours, then remove from oven and let cool.
  13. Remove the Pavlova from the pan and place it on a serving dish.
  14. Drain the fruit and spoon it on top of the meringue.
  15. Cover with whipped cream and serve.
