Ingredients

  • 1 eggplant
  • 2 cups white flour
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • peanut oil

Instructions

  1. Slice the eggplant into 1/2-inch thick pieces, then cut each slice into 1/2 x 3-inch sticks.
  2. Place the eggplant sticks on paper towels, sprinkle with 1 teaspoon salt, and let sit for 20 minutes.
  3. In a paper bag, combine 2 cups of white flour, 1 teaspoon salt, and 1 teaspoon pepper.
  4. Add the eggplant sticks to the bag and shake to coat them with the seasoned flour.
  5. Heat 1 1/2 inches of peanut oil in a skillet until very hot.
  6. Fry the coated eggplant sticks in batches until they are golden brown, being careful not to crowd the pan.
  7. Drain the fried eggplant on paper towels and sprinkle with additional salt if desired.
  8. Serve immediately while hot and crispy.
