Ingredients

  • 3/8 cup unsalted butter, softened
  • 6 tablespoons peanut butter
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup grape jelly

Instructions

  1. Put oven rack in middle position and preheat oven to 350 degrees F.
  2. Line a 9-inch square baking pan with foil.
  3. Beat together butter, peanut butter, and brown sugar in a large bowl with an electric mixer at medium speed until fluffy, about 2 minutes.
  4. Add eggs and beat until combined.
  5. Mix in flour and salt at low speed until a dough forms.
  6. Reserve 1 cup dough for topping.
  7. Press remaining dough evenly in bottom of baking pan.
  8. Spread jelly in an even layer on top of dough, then coarsley crumble reserved dough over jelly layer.
  9. Bake until top is golden, 30 to 35 minutes.
  10. Cool completely in pan on a rack, about 45 minutes, then cut into bars.
