Ingredients

  • 1 bag dry peas
  • 1 onion medium
  • 3 potatoes diced
  • 4 carrots drained
  • leftover ham
  • salt to taste

Instructions

  1. Wash and sort the dry peas.
  2. Boil the peas in enough water to cover them for 20 minutes.
  3. Let the peas stand for 20 minutes, then drain.
  4. Fill the pot with fresh water.
  5. Add the remaining ingredients, including chopped onion, diced potatoes, drained carrots, and leftover ham.
  6. Simmer the soup until the vegetables are tender and the flavors meld, about 20-30 minutes.
