Ingredients

  • 1 (9-inch) baked pie shell
  • 1 envelope unflavored gelatin
  • 2 Tbsp. cold water
  • 1 (1 1/2 oz.) jar apricot preserves
  • 1/2 tsp. almond extract
  • 1 (29 oz.) can peach halves, drained
  • 1/2 cup whipped topping

Instructions

  1. Sprinkle unflavored gelatin over cold water to soften.
  2. Bring apricot preserves to a boil; stir in the softened gelatin and stir until dissolved.
  3. Add almond extract to the gelatin mixture and cool until slightly thickened.
  4. Arrange drained peach halves in the baked pie shell with cut sides down.
  5. Pour the gelatin mixture over the peaches in the crust.
  6. Refrigerate the pie for 3 hours to set.
  7. Serve chilled, topped with whipped topping.
