A refreshing peach and orange gelatin salad with a bubbly ginger ale twist, perfect for light summer meals or elegant entertaining with a fruity, tangy flavor.

Ingredients

  • 1 (3 oz.) pkg. orange gelatin
  • 1 cup hot water
  • 1 cup ginger ale
  • 1 (No. 2) can sliced peaches

Instructions

  1. Dissolve the orange gelatin in hot water.
  2. Open the ginger ale and let it stand a few minutes until fizzing stops.
  3. Add the ginger ale to the gelatin mixture.
  4. Drain the sliced peaches and arrange them in the bottom of a 9 x 5-inch bread pan or individual molds.
  5. Pour the gelatin mixture over the peaches and chill until set.
  6. Unmold the salad and serve on lettuce garnished with cream dressing.
