Peach Pineapple Upside-Down Cake

Ingredients

  • 1 1/2 c. dark brown sugar, packed well
  • 1 stick butter or oleo
  • 6 pineapple slices
  • 1 c. peach slices
  • 6 to 8 maraschino cherries
  • 3/4 c. chopped pecans

Instructions

  1. Make your favorite yellow cake recipe.
  2. Melt butter and brown sugar in a 9-inch skillet.
  3. Let cool.
  4. Place pineapple, peaches and cherries on top of syrup.
  5. Pour in yellow cake batter and cook at 325° in preheated oven for 45 minutes.
  6. Let cool slightly and turn out on plate upside down.
  7. Garnish with whipped cream.
  8. Pecan halves added with fruit may be used.
